At PHÉNIX eatery & bar, newly appointed Executive Chef Pierrick Maire, presents new dishes drawing from the restaurant’s philosophy of “Life is about the ingredients”.
灵感源自其家乡马赛的海鲜汤，是主厨Pierrick力荐的美味。新鲜杂鱼、贝类和蔬菜共同熬煮出风味浓郁的肉汤，藏红花和八角茴香的加入更为汤汁增色不少，使得味蕾的体验更为震撼。
Inspired by his hometown of sunny Marseille, Chef Pierrick introduces Seafood Soup, an assortment of fish, shellfish and vegetables for a flavourful broth, with added dimension from saffron and star anise to awaken the senses.
鲜美清爽的开胃前菜海螯虾，用新鲜草本植植物精心点缀，并配以时令蔬菜精心熬煮出的香槟龙虾汁。与奥斯特拉鲟鱼子、青苹果泥、及芹菜穆斯优雅搭配的海胆，令人愉悦的天然风味愈加亮眼迷人。
Guests may whet their appetite with Langoustine, exquisitely prepared with fresh herbs, paired with seasonal vegetables and a decadent Champagne-lobster sauce. The elegantly presented Sea Urchin is paired with oscietra caviar, green apple and vanilla-celery bavaroise to enhance the natural flavours of this delightful delicacy.

Hearty mains such as the roasted on the bone Duck Breast is finely sliced and luxuriously presented with foie gras, honey and sweet spices complementing the richness of the dish, finished with tantalising cherries. The meticulously prepared Barramundi is served with clam ragù and vegetables, delicately balanced with lemon-verbena emulsion for a crisp, refreshing flavour on the palate.

Not to miss is the Black Angus Striploin where flavours of the sun-kissed Mediterranean region are presented along with anchovies, tomato pissaladière and olives, an exquisite dish available only on the new Chef’s Tasting Menu.
